4 Roast Vegetable Dips for Veggies, Chips and Crackers

It’s so easy to create delicious looking trays of snacks for your next gathering. Not only is it cost efficient, eye catching and nutritious, it only takes a bit of your time and can be prepared the day before! The results are very worth while! Just a few simple techniques will produce your desired outcome. Everyone will dive right in and forget that it’s healthy as well! Just follow these simple easy steps to be the hostess with the mostess!

Easy tips to create a vegetables with dip tray.

  1. Make little-medium size scoops rather than huge ones.
  2. Cut mushrooms in half or quarters.
  3.  Cut veggies in similar sizes.
  4. Put your dips in bowls and on the platters first.
  5. Stack similar veggies together and all going in the same direction.
  6. Buy mini carrots so you don’t have to peel and cut them.
  7. Vary the colors on the plates to create an attractive display.
  8. Use a smaller bowl turned upside down to elevate your dip in a chip bowl.
  9. Provide both vegetarian and meat dishes.
  10. Placing cheese on some of the crackers is pretty if serving immediately, otherwise, put the cheese directly on the plate beside the crackers or on a separate plate, as the cheese will moisten the crackers.
  11. Provide a variety of snacks for your family and guests, especially if consuming alcohol.  
  12. Use leftovers vegetables for chili, stews, soups and stir-frys.
  13. The dips are also great on toast, pasta or sandwiches.

* Note to Vegetarian Dippers – ingredients are flexible, just don’t add the bacon and the recipes will still be delicious!

Roast Carrot Dip

Ingredients:

  • 2 cups roasted carrots
  • 3 roasted garlic or 1 teaspoon garlic salt or garlic powder
  • ½ pack low fat cream cheese
  • ½ cup low fat mayonnaise
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup parsley
  • ½ teaspoon chili garlic sauce or sriracha or any hot sauce
  • 3 tablespoons olive oil
  • 2 heaping tablespoons of bacon bits

Instructions:

  • Add all ingredients, except bacon, to a food processor and blend until smooth.
  • Add bacon bits and do a quick blend.
  • Place in a bowl and garnish with parsley and bacon bits.
  • Let cool in the fridge about 30 minutes or over night.

Roast Onion Dip

Ingredients:

  • 1 large roasted onion
  • ½ teaspoon garlic salt or garlic powder
  • ½ brick low fat cream cheese
  • ½ cup low fat mayonnaise
  • ½ cup sour cream
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 tablespoons olive oil
  • ½ teaspoon Sriracha
  • 3 heaping tablespoons of bacon bits

Instructions:

  • Add all ingredients, except bacon, to a food processor and blend until smooth.
  • Add bacon bits and do a quick blend.
  • Place in a bowl and garnish with parsley and bacon bits.
  • Let cool in the fridge about 30 minutes or over night.

Roast Beet and Feta Cheese Dip

Ingredients:

  • 2  roasted beets
  • 2 roasted garlic cloves or 1 teaspoon garlic salt or garlic powder
  • ½ cup low fat mayonnaise
  • ½ cup sour cream
  • ¼ cup parsley
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup feta cheese
  • ½ brick low fat cream cheese
  • 2 heaping tablespoons of bacon bits

Instructions:

  • Add all ingredients, except bacon, to a food processor and blend until smooth.
  • Add bacon bits and do a quick blend.
  • Place in a bowl and garnish with feta cheese and bacon bits.
  • Let cool in the fridge about 30 minutes or over night.

Roast Turnip Curry Dip

Ingredients:

  • 1  roasted turnip
  • 3 tablespoons olive oil
  • ½ teaspoon tumeric
  • ½ teaspoon garam masala
  • ¼ teaspoon oregano
  • ½ teaspoon garlic salt or garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ brick low fat cream cheese
  • ½ cup low fat mayonnaise
  • 4 tablespoons honey
  • ½ teaspoon sriracha

Instructions:

  • Add all ingredients to a food processor and blend until smooth.
  • Place in a bowl and garnish with parsley.
  • Let cool in the fridge about 30 minutes or over night.
